WILD RICE AND ALMONDS CASSEROLE

 Ingredients

·        1/2 cup butter or margarine

·        1/2 cup sliced mushrooms

·        2 tbsp. Chopped green onion

·        1 cup wild rice, washed

·        1 clove minced garlic

·        2 tbsp. Chopped green pepper

·        1/2 cup chopped blanched almonds

·        3 cups chicken broth (or 3 chicken bouillon cubes)

Heat oven to 375 deg F. In a heavy skillet melt butter and add all ingredients except broth. Cook 10 minutes, stirring constantly. Add broth and place in casserole; cover tightly, and bake 1 hour. Serves 6.
